Festive Baking... Gingerbread Loaf

With only one more sleep to go (eeekk!), Christmas Eve can be pretty hectic! Let's be honest, nobody is ever as organised as they said they were going to be in preparation for the big day. I'm pretty sure the saying 'so much to do, such little time' was invented on Christmas Eve?!

However, making some time to bake a festive dessert is productive, yet still fills you with Christmas spirit.

This year I couldn't wait to get baking Tanya Burr's gingerbread loaf. I'm definitely not the best baker, but Tanya's book 'Tanya Bakes' is full of tonnes of delicious treats, that are super easy to bake.

And it really doesn't get more festive than gingerbread.

Serves: 6-8

Prep Time: 15 mins
Cooking Time: 30 Mins

100g butter
100g golden syrup 
150g self-raising flour
3 teaspoons ground ginger
150g caster sugar
1 teaspoon bicarbonate of soda
150ml milk
1 large egg 

Preheat the oven to 180C/160C fan/350F/GM4. Line the loaf tin with greaseproof paper.

Melt the butter and the golden syrup together in a pan and set aside.

Mix together flour, ground ginger, sugar and bicarbonate of soda in a bowl, then slowly whisk in the milk and egg, followed by the syrup mixture, forming a smooth batter.

Pour into the tin and bake for 30-35 minutes, until golden and a skewer or knife poked into the centre comes out clean. Leave to cool.
